My Daughter's Greek Salad

This is a salad we eat pretty well everyday in our house. When we have a house hold of guests it's a perfect side salad and when I'm home alone, it's all I ever want for dinner. 

I'll admit it's not an 100% authentic Greek salad but it's my daughter's recipe and we all love it. 

Some additions - I personally like to add avocado in my salad (very Australian I know). My daughter also folds through quinoa when there are a large number of people to feed. 

My Daughter's Greek Salad

Serves 2 or 4 as a side salad.

INGREDIENTS:

  • 5 large tomatoes (can use a mix of roma, truss or cherry tomatoes)
  • 1 cucumber
  • 1/2 red onion
  • Capers
  • Olives
  • Feta
  • Lemon Juice
  • Dill & Parsley to taste
  • Olea of Monemvasia Extra Virgin Olive Oil 
  • Dried Oregano
  • Salt & Pepper
  • optional: avocado & quinoa

Basically just chop everything up and mix it all together with a big glug of olive oil. Finish with the dried oregano on top. 

A little trick my daughter does is to dice the red onion first then she squeezes the lemon juice over the onion and massages it in to the onion. This takes away the oniony after taste / breath. Essential in her books.
