Green Pea & Parsley Pesto

 
 

This is such a quick and easy recipe that is a healthy option for a snack, a cheese platter or a quick meat free dinner. The peas make the pesto creamy so there is no need for the addition of dairy in this pesto. Healthy and delicious!! Also a great thing to make when the herbs & greens in your fridge need using asap.

INGREDIENTS:

  • 1/2 cup green peas (we use frozen organic)

  • 1/4 cup of walnuts

  • 1 lemon (juice)

  • 1/4 - 1/2 cup Olea of Monemvasia EVOO

  • 1.5 cups of mixed herbs (you can use basil, parsley, dill, kale, etc or a mixture of all of them)

  • salt & pepper

  • 1/2 a small garlic clove

Method: In a small bowl, add the frozen green peas with boiling water to thaw and soften for about 10 mins.

Strain peas and add to a food processor with 1/4 cup of EVOO, walnuts, lemon juice, salt, pepper and garlic. Mix on high until the mixture is a paste.

Add the herbs at this point and mix until the pesto is the consistency you like. If needed, add more olive oil to make more of a smooth paste. If you like your pesto crunchy, you can also add more walnuts at the end for a short blitz so nuts remain chunky.

Taste the pesto to see if it needs more lemon juice or salt & pepper.

Serve with crackers, on a cheese platter, with pasta or zucchini noodle or on top of grilled chicken.
