Gut Healing Chicken Soup

 
 
 

There is really no better gut-healing food than chicken soup. When you’re feeling run down, sick or are just trying to restore the minerals in your body, this healing chicken soup is perfect. It gives your digestive system a rest and kick start as well as filling your digestive tract & gut microbiome with polyphenols, minerals and healthy flora.

The perfect meal to cook for a new mum or a sick friend!

INGREDIENTS:

  • 1 chicken thigh (organic where possible)

  • 500grams of either chicken wings or chicken drumsticks (organic where possible)

  • 4 cloves of garlic

  • 1 large onion

  • 5 tbs of Phileos of Sparta EVOO

  • Fresh burdock root (if available)

  • 1 tsp cumin seeds

  • 1 tsp fenugreek seeds

  • 1 tsp coriander seeds

  • 1 tbs turmeric or a knob of fresh turmeric if you can get it

  • 1 knob of fresh ginger

  • 2 x small cinnamon bark sticks or 1 small cinnamon stick

  • 1 lemon

  • 3 tbs Apple Cider Vinegar

  • 1.5 L water

  • 1 tbs salt & 1 tbs pepper

Method: Dice the onion, burdock root & garlic and add to large a pot with a large glug of Olive Oil (about 2 tbs).

Cook down ingredients until they are soft then add the spices: cumin, fenugreek, coriander, ginger, turmeric & cinnamon sticks. Slice the peel off the lemon and add to the pot. Cook down for another 5 - 7 mins before removing from the pot into a small bowl.

Once you’ve emptied the pot, add another glug of EVOO with the chicken pieces. Cut the thigh into squares and place skin down first. Allow the chicken to really brown on each side before adding the onions & spices from before. Mix together and cook for a couple of minutes before adding the 3 tbs of Apple Cider Vinegar. Stir together before adding 1.5 L of water.

Put the lid on the pot and cook on the lowest heat for 1 hour.

Add the salt and pepper and squeeze the lemon juice from the skinned lemon.

Taste for flavour, feel free to add more salt if needed.

Once it’s been simmering for 1 hour, turn off the heat and allow to sit for about 20 mins to cool down. Remove the lemon peel & cinnamon bark before eating - everything else can be eaten. There may be a thin layer of fat on the top, do not remove, this is full of gelatin and healing minerals for your gut.

This will last in the fridge for 3 days or freeze for as long as you like.
