Olive oil has been entwined with Greek history for thousands of years and the lives of the Greek people are intrinsically linked to the olive and its oil.
Phileos extra virgin olive oil is sourced from a co-op of growers in Laconia. Olives have grown in this area for thousands of years and if you visit the area, you see olive trees growing in wild places, on the furthest hillsides, unattended and thriving. It is a perfect micro-climate- warm rocky hillsides near the Aegean sea.
The olive varieties in our olive oil, Athinolia and Koroneiki are best suited to the area and many of the trees are hundreds (even thousands) of years old, which means more flavourful fruit. The mix of the varieties Koroneiki (75%) and Athinolia (25%) achieves a delicate balance of sweet and sharp taste.
There are hints of almond, pepper, artichoke, fig leaf and walnut.
Koroneiki olives have intense scent and robust flavour with pepperiness from polyphenols and Athinolia are aromatic, have a fruity scent and this variety exhibits one of the highest indicators in content of total polyphenols of all Greek varieties.
Athinolia olives only grow in Laconia in Greece!
